Sweet Potato Brownies

Hi my name is Jacque Cafaro; my husband Vicente Cafaro is the cultural coordinator for the San Diego Padres. We stay busy while he is traveling by swimming, going to the gym, and more recently cooking/baking together.

I love trying new recipes with my kids for a couple reasons. They learn how healthy foods can nourish our bodies and also taste delicious, and honestly it makes us all giggle when they whip something up!

After you watch the video, make a batch of these incredible brownies and put them in the freezer for a sweet treat!

Sweet Potato Brownies
These paleo brownies are gooey and delicious!
Ingredients
  • 1 sweet potato
  • 1/2 cup coconut flour
  • 1/2 cup (plus 1 Tbsp for frosting) cocoa powder
  • 3/4 cup (reserve 1/4 cup for frosting) almond butter
  • 1/2 cup maple syrup
  • 1 scoop protein powder
  • 1/4 cup blended dates
  • splash coconut milk
Instructions
Brownies: Wash and peel the sweet potatoes completely. (I have tried it with the skin on, but it doesn't blend well). Chop then boil the sweet potatoes until very soft, drain and let cool. In a bowl combine the cocoa powder, protein powder, maple syrup and almond butter and stir well. Blend the sweet potatoes until they are smooth (no chunks). We use a Blendtec blender but have also blended them well with a Kitchenaid hand mixer. Add the sweet potatoes to the bowl and stir everything together. Finally, add coconut flour and stir!! Bake at 350 for 10-15 min. We typically shorten the baking time so they're gooey!Frosting: Use pitted dates and soak them in warm water for 5 min. Combine the dates with coconut/almond milk in the blender (you'll need the liquid to blend them to a smooth paste). Combine the date paste with the almond butter and cocoa powder. Refrigerate! Wait until the brownies have cooled completely before frosting. ENJOY!!!
