Banana Bread Overnight Oats
If you’re living the baseball life, chances are you have an unconventional schedule. Late night games, traveling and/or single parent child-rearing to name just a FEW. Regardless of the day or situation, anything that cuts back on stress and time in the kitchen is a personal home run, in my opinion.
Thankfully, overnight oats have entered the scene and taken meal prepping to another level. My personal favorite are these banana bread overnight oats. Made gluten free (but can be made standard), they’re packed full of nutrients to keep you full long after the spoon scrapes the bottom of the jar. And because I like to top mine with a bit of indulgence like dark chocolate and unsweetened coconut…eating healthy never tasted so good!
Banana Bread Overnight Oats
Yield: 1
ingredients:
- 1/2 mashed banana
- 1/2 cup gluten free oats
- 1/2 cup almond milk
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 Tbsp flax
- 1 Tbsp chia seeds
- 2 tsp maple syrup
- dash of salt
- coconut and chocolate chips for garnish before serving

How to cook Banana Bread Overnight Oats
- Mix all ingredients in a small bowl.
- Add to mason jar and seal.
- Let sit in the refrigerator overnight.
- To serve, remove lid and heat in microwave for 45 seconds. Top with coconut and chocolate chips or other garnish of your choice.
